  • 1 cup of white rice
  • 1 can of coconut milk
  • 1/2 cup of water
  • 1/2 teaspoon of salt

  • 1/4 cup of shredded coconut (optional)

Start by rinsing the rice until the water runs clear. In a medium-sized pot, combine the rice, coconut milk, water, and salt. Bring the mixture to a boil over high heat, then reduce the heat to low and cover the pot with a lid. Allow the rice to simmer for 18-20 minutes, or until all the liquid is absorbed and the rice is tender.
