How to Make Delicious Roasted Red Pepper and Feta Dip

Ingredients:

  • 2 red bell peppers
  • 4 oz crumbled feta cheese
  • 1/2 cup Greek yogurt
  • 1/4 cup chopped fresh parsley
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Olive oil

To start, preheat your oven to 450°F. Cut the red bell peppers into quarters, and remove the seeds and stems. Place the pepper quarters on a baking sheet lined with parchment paper, and brush them with olive oil.

Roast the peppers in the oven for 20-25 minutes, or until they are tender and charred in places. Remove them from the oven and let them cool for a few minutes.
