Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 large potatoes, peeled and cut into 1-inch cubes
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. 2. Add the beef and cook until browned on all sides, about 5-7 minutes. 3. Remove the beef from the pot and set aside. 4. Add the onions to the pot and sauté until soft and translucent, about 5 minutes. 5. Add the garlic and sauté for another minute. 6. Add the tomato paste, thyme, rosemary, bay leaf, and salt and pepper to taste. 7. Stir to combine and cook for another minute. 8. Add the beef back to the pot along with the potatoes and beef broth. 9. Bring to a boil, then reduce heat and simmer for 1-2 hours, or until the beef is tender and the potatoes are cooked through. 10. Remove the bay leaf and adjust the seasoning as needed. 11. Serve hot and enjoy!

Tips

- For added flavor, you can brown the beef in batches instead of all at once. This will create a nice crust on the beef and add depth to the stew. - You can also add additional vegetables such as carrots, celery, or peas to the stew. - Serve with crusty bread or over a bed of mashed potatoes for a complete meal.
