Introduction

- 1 cup dried chickpeas, soaked overnight
- 1/2 onion, chopped
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp baking soda
- 1 tbsp all-purpose flour
- Vegetable oil for frying
Soak the dried chickpeas in water overnight. Drain and rinse them before using.
Chop the onion, parsley, and cilantro finely and set aside.
Instructions
- In a food processor, pulse the chickpeas until they are chopped but not pureed.
- Add the onion, parsley, cilantro, garlic, cumin, coriander, salt, black pepper, and baking soda to the food processor. Pulse until the mixture is well combined but still has some texture.
- Transfer the mixture to a bowl and stir in the flour. Mix until the flour is well incorporated.
- Shape the mixture into small balls, about 1.5 inches in diameter.
- In a deep frying pan, heat the vegetable oil to 350°F.
- Fry the falafel balls in batches until they are golden brown and crispy, about 3-4 minutes per batch.
- Remove the falafel from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
