Ingredients

  • 1 cup dried chickpeas, soaked overnight
  • 1/2 onion, chopped
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp baking soda
  • 1 tbsp all-purpose flour
  • Vegetable oil for frying

Soak the dried chickpeas in water overnight. Drain and rinse them before using.

Chop the onion, parsley, and cilantro finely and set aside.

Instructions

  1. In a food processor, pulse the chickpeas until they are chopped but not pureed.
  2. Add the onion, parsley, cilantro, garlic, cumin, coriander, salt, black pepper, and baking soda to the food processor. Pulse until the mixture is well combined but still has some texture.
  3. Transfer the mixture to a bowl and stir in the flour. Mix until the flour is well incorporated.
  4. Shape the mixture into small balls, about 1.5 inches in diameter.
  5. In a deep frying pan, heat the vegetable oil to 350°F.
  6. Fry the falafel balls in batches until they are golden brown and crispy, about 3-4 minutes per batch.
  7. Remove the falafel from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
