Ingredients:

  • 4 large bell peppers, any color
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, chopped
  • 1 zucchini, chopped
  • 1 can diced tomatoes, drained
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheddar cheese

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers and remove the seeds and membranes. Rinse the peppers inside and out.
  3. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  4. Add the onion, zucchini, tomatoes, garlic, oregano, basil, salt, and black pepper to the skillet. Cook for 5-7 minutes, until the vegetables are tender.
  5. Stir in the cooked rice and 1/4 cup of the cheese.
  6. Stuff the peppers with the mixture and place them in a baking dish. Top each pepper with the remaining cheese.
  7. Bake for 30-35 minutes, until the peppers are tender and the cheese is melted and bubbly.
  8. Serve hot and enjoy!
