Ingredients:
- 4 large bell peppers, any color
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, chopped
- 1 zucchini, chopped
- 1 can diced tomatoes, drained
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded cheddar cheese
Instructions:
- Preheat your oven to 375°F (190°C).
- Cut off the tops of the bell peppers and remove the seeds and membranes. Rinse the peppers inside and out.
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the onion, zucchini, tomatoes, garlic, oregano, basil, salt, and black pepper to the skillet. Cook for 5-7 minutes, until the vegetables are tender.
- Stir in the cooked rice and 1/4 cup of the cheese.
- Stuff the peppers with the mixture and place them in a baking dish. Top each pepper with the remaining cheese.
- Bake for 30-35 minutes, until the peppers are tender and the cheese is melted and bubbly.
