- 1 cup of brown rice- 1 cup of lentils- 1 onion, chopped- 2 garlic cloves, minced- 1 red bell pepper, chopped- 1 zucchini, chopped- 1 can of diced tomatoes- 2 cups of vegetable broth- 1 tsp of smoked paprika- 1 tsp of cumin- Salt and pepper to taste- 1 tbsp of olive oil

Directions:

1. Preheat your oven to 375°F (190°C).2. In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.3. Add the red bell pepper and zucchini and cook for another 5 minutes.4. Add the brown rice, lentils, diced tomatoes, vegetable broth, smoked paprika, cumin, salt, and pepper. Stir well.5.
