Ingredients:
- 2 medium zucchinis
- 1/2 cup of breadcrumbs
- 1/2 cup of grated Parmesan cheese
- 1 teaspoon of garlic powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 eggs
- 1 tablespoon of olive oil
To start, preheat your oven to 425°F and line a baking sheet with parchment paper. Then, slice your zucchinis into thin, fry-shaped pieces. In a small bowl, mix together the breadcrumbs, Parmesan cheese, garlic powder, salt, and black pepper.
In a separate bowl, whisk together the eggs. Dip each zucchini slice into the egg mixture and then coat it in the breadcrumb mixture. Place the coated zucchini slices onto the baking sheet and drizzle with olive oil.
