Delicious Moroccan-Style Quinoa and Vegetable Tagine Recipe

Ingredients:

  • 1 cup quinoa
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 large sweet potato, peeled and diced
  • 2 carrots, peeled and sliced
  • 1 red bell pepper, seeded and diced
  • 1 can chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/4 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 2 cups vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Rinse the quinoa and set aside.
  2. Heat the olive oil in a large pot or Dutch oven over medium heat.
  3. Add the onion and garlic and sauté for 2-3 minutes until fragrant.
  4. Add the sweet potato, carrots, bell pepper, chickpeas, and canned tomatoes to the pot.
  5. Add the cumin, coriander, paprika, cinnamon, and cayenne pepper to the pot.
  6. Saute the vegetables and spices together for 5-7 minutes until the vegetables begin to soften.
  7. Add the quinoa and vegetable broth to the pot.
  8. Bring the mixture to a boil, then reduce heat to low and cover the pot.
  9. Simmer the mixture for 20-25 minutes until the quinoa is cooked and the vegetables are tender.
  10. Season with salt and pepper to taste.
