Ingredients:
- 1 cup quinoa
- 1 onion, diced
- 2 cloves garlic, minced
- 1 large sweet potato, peeled and diced
- 2 carrots, peeled and sliced
- 1 red bell pepper, seeded and diced
- 1 can chickpeas, drained and rinsed
- 1 can diced tomatoes
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/4 tsp cinnamon
- 1/4 tsp cayenne pepper
- 2 cups vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Rinse the quinoa and set aside.
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the onion and garlic and sauté for 2-3 minutes until fragrant.
- Add the sweet potato, carrots, bell pepper, chickpeas, and canned tomatoes to the pot.
