Ingredients:

  • 1 lb. fresh salmon, skin removed and cut into small pieces
  • 4 slices of bacon, chopped
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups diced potatoes
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 tbsp. chopped fresh thyme leaves
  • Salt and pepper to taste
To start, cook the chopped bacon in a large pot over medium heat until crispy. Remove the bacon from the pot and set aside.In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.Add the diced potatoes and chicken or vegetable broth to the pot. Bring to a boil, then reduce the heat to a simmer and cook until the potatoes are tender, about 15-20 minutes.Add the chopped salmon, cooked bacon, and chopped thyme leaves to the pot. Simmer for another 5-10 minutes, until the salmon is cooked through.Finally, stir in the heavy cream and simmer for another 5 minutes. Season with salt and pepper to taste.Serve hot with a crusty bread or crackers on the side.
