Ingredients:

  • 1 large eggplant
  • 1/2 cup all-purpose flour
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup tzatziki sauce

To start, preheat your oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper. Cut the eggplant into thin, fry-shaped pieces and set aside.

In a shallow dish, combine the flour, garlic powder, and paprika. In another shallow dish, place the panko breadcrumbs. Dip each eggplant fry into the flour mixture, then into the breadcrumbs, making sure each fry is coated evenly.

Place the coated eggplant fries onto the prepared baking sheet and drizzle with olive oil. Sprinkle with salt and pepper, then bake for 15-20 minutes, or until the fries are golden brown and crispy.

While the fries are baking, prepare the tzatziki sauce. In a small bowl, mix together 1/2 cup of Greek yogurt, 1/4 cup grated cucumber, 1 tablespoon chopped fresh dill, 1 clove minced garlic, and a pinch of salt.

Serving:

Once the eggplant fries are done, remove them from the oven and let cool for a few minutes. Serve them with the tzatziki sauce on the side for dipping. Enjoy!
