Ingredients:

  • 1 1/2 lbs pork tenderloin, cut into small chunks
  • 2 medium apples, peeled and chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions:

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the pork and cook until browned on all sides, about 5 minutes. Remove from skillet and set aside.
  3. Add the apples, onion, and garlic to the same skillet and cook until softened, about 5 minutes.
  4. Stir in the thyme, rosemary, salt, and black pepper.
  5. Add the chicken broth and heavy cream and bring to a simmer.
  6. In a small bowl, whisk together the cornstarch and water. Add to the skillet and stir until the sauce thickens, about 2 minutes.
  7. Add the pork back to the skillet and stir to coat in the sauce.
  8. Transfer the mixture to a casserole dish and bake for 25-30 minutes, until the pork is cooked through and the sauce is hot and bubbly.
