Delicious Penne with Italian Sausage and Peppers Recipe

Ingredients:

  • 1 pound of penne pasta
  • 1 pound of Italian sausage, casings removed
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 small onion, chopped
  • 3 cloves of garlic, minced
  • 1 can (14.5 oz) of diced tomatoes
  • 1/2 cup of chicken broth
  • 1/4 cup of chopped fresh basil
  • 1/4 cup of grated Parmesan cheese
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Directions:

  1. Bring a large pot of salted water to a boil. Add penne pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it up into small pieces with a wooden spoon.
  3. Add sliced bell peppers and chopped onion to the skillet. Cook until vegetables are tender and sausage is fully cooked, about 5-7 minutes.
  4. Add minced garlic to the skillet and cook for another minute.
  5. Stir in diced tomatoes and chicken broth. Bring to a simmer and cook until the liquid has reduced by half, about 5-7 minutes.
  6. Remove from heat and stir in chopped basil.
  7. Add cooked penne pasta to the skillet and toss to combine with the sausage and pepper mixture.
  8. Sprinkle grated Parmesan cheese over the top and serve hot.
