Ingredients:
- 1 pound of penne pasta
- 1 pound of Italian sausage, casings removed
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 small onion, chopped
- 3 cloves of garlic, minced
- 1 can (14.5 oz) of diced tomatoes
- 1/2 cup of chicken broth
- 1/4 cup of chopped fresh basil
- 1/4 cup of grated Parmesan cheese
- 2 tablespoons of olive oil
- Salt and pepper to taste
Directions:
- Bring a large pot of salted water to a boil. Add penne pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it up into small pieces with a wooden spoon.
- Add sliced bell peppers and chopped onion to the skillet. Cook until vegetables are tender and sausage is fully cooked, about 5-7 minutes.
- Add minced garlic to the skillet and cook for another minute.
- Stir in diced tomatoes and chicken broth. Bring to a simmer and cook until the liquid has reduced by half, about 5-7 minutes.
- Remove from heat and stir in chopped basil.
- Add cooked penne pasta to the skillet and toss to combine with the sausage and pepper mixture.
