Chicken noodle soup is a classic comfort food that is perfect for any time of year. It's easy to make and is packed with flavor, making it a favorite among both kids and adults. Here's a simple recipe that will have you enjoying a hot bowl of soup in no time.

Ingredients:

  • 1 pound of boneless, skinless chicken breasts
  • 8 cups of chicken broth
  • 1 cup of chopped carrots
  • 1 cup of chopped celery
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 1 bay leaf
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • 8 oz of egg noodles

For this recipe, you can use either fresh or frozen chicken breasts. Start by heating a large pot over medium-high heat. Add the chicken breasts and cook until they are browned on both sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

Add the chopped carrots, celery, onion, and garlic to the pot and cook for about 5 minutes or until the vegetables are soft. Pour in the chicken broth and add the bay leaf, dried thyme, salt, and pepper. Bring the soup to a boil and then reduce the heat to low. Add the chicken back to the pot and let it simmer for about 20-25 minutes, or until the chicken is cooked through.

While the soup is simmering, cook the egg noodles according to the package instructions. Once the chicken is cooked through, remove it from the pot and shred it with two forks. Discard the bay leaf and add the shredded chicken and cooked egg noodles back to the pot. Serve hot and enjoy!
