  • 4 medium-sized beets, peeled and diced

  • 1/4 cup balsamic vinegar
  • 1 teaspoon honey
  • 4 ounces goat cheese, crumbled
  • 1/4 cup walnuts, roughly chopped
  • 4 cups arugula
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Place the diced beets on a baking sheet and drizzle with 2 tablespoons of olive oil. Season with salt and pepper.
