Ingredients:
- 1 pound ground beef
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 10-12 mini sweet peppers, halved and seeded
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 tablespoons chopped fresh chives
Instructions:
- Preheat the oven to 375°F.
- In a large skillet, cook the ground beef, onion, and bell pepper over medium heat until the beef is browned and the vegetables are tender. Drain any excess grease.
- Add the garlic powder, paprika, salt, and black pepper to the skillet and stir to combine.
- Arrange the halved sweet peppers on a baking sheet lined with parchment paper.
- Spoon the beef mixture into each pepper half and top with shredded cheddar cheese.
- Bake for 15-20 minutes or until the cheese is melted and bubbly.
- While the peppers are baking, prepare the sour cream dipping sauce by combining the sour cream and chopped chives in a small bowl.
