Ingredients:
- 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 can diced tomatoes
- 1 can black beans, drained and rinsed
- 4 cups chicken broth
- 1 tsp. chili powder
- 1 tsp. cumin
- 1/2 tsp. paprika
- 1/4 tsp. cayenne pepper
- Salt and pepper to taste
- 1 tbsp. olive oil
- 1 cup tortilla strips
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Instructions:
- Heat the olive oil in a large pot over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes. Remove the chicken from the pot and set aside.
- Add the onion, garlic, and red bell pepper to the pot and sauté until the vegetables are softened, about 5 minutes.
- Add the diced tomatoes, black beans, chicken broth, chili powder, cumin, paprika, cayenne pepper, salt, and pepper to the pot. Bring the mixture to a simmer.
- Add the chicken back to the pot and continue to simmer for about 20 minutes or until the chicken is cooked through.
- Just before serving, add the tortilla strips and cilantro to the pot and stir to combine.
