Mexican Chicken Tortilla Stew Recipe: A Delicious and Authentic Meal

Ingredients:

  • 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 4 cups chicken broth
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp. paprika
  • 1/4 tsp. cayenne pepper
  • Salt and pepper to taste
  • 1 tbsp. olive oil
  • 1 cup tortilla strips
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions:

  1. Heat the olive oil in a large pot over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes. Remove the chicken from the pot and set aside.
  2. Add the onion, garlic, and red bell pepper to the pot and sauté until the vegetables are softened, about 5 minutes.
  3. Add the diced tomatoes, black beans, chicken broth, chili powder, cumin, paprika, cayenne pepper, salt, and pepper to the pot. Bring the mixture to a simmer.
  4. Add the chicken back to the pot and continue to simmer for about 20 minutes or until the chicken is cooked through.
  5. Just before serving, add the tortilla strips and cilantro to the pot and stir to combine.
  6. Serve hot with lime wedges on the side.
