Ingredients:
- 1 cup of fresh spinach
- 1/2 cup of crumbled feta cheese
- 1/2 cup of heavy cream
- 1/2 cup of milk
- 4 eggs
- 1/4 cup of grated Parmesan cheese
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of nutmeg
- 1/4 teaspoon of garlic powder
- 1 refrigerated pie crust
Instructions:
- Preheat the oven to 375°F (190°C) and place a muffin tin on the side.
- In a skillet, cook the spinach over medium heat until it wilts. Remove from heat and let it cool down.
- In a mixing bowl, whisk together the heavy cream, milk, eggs, Parmesan cheese, salt, pepper, nutmeg, and garlic powder.
- Add the cooled spinach and feta cheese to the mixture and stir it all together.
- Roll out the pie crust on a lightly floured surface and cut out circles to fit the muffin tin.
- Place the pie crust circles in the muffin tin and press them down gently.
- Pour the spinach and feta mixture into each pie crust until it's about 3/4 full.
- Bake the mini quiches for 20-25 minutes or until golden brown.
