Delicious Mini Quiches with Spinach and Feta Cheese Recipe

Ingredients:

  • 1 cup of fresh spinach
  • 1/2 cup of crumbled feta cheese
  • 1/2 cup of heavy cream
  • 1/2 cup of milk
  • 4 eggs
  • 1/4 cup of grated Parmesan cheese
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of nutmeg
  • 1/4 teaspoon of garlic powder
  • 1 refrigerated pie crust

Instructions:

  1. Preheat the oven to 375°F (190°C) and place a muffin tin on the side.
  2. In a skillet, cook the spinach over medium heat until it wilts. Remove from heat and let it cool down.
  3. In a mixing bowl, whisk together the heavy cream, milk, eggs, Parmesan cheese, salt, pepper, nutmeg, and garlic powder.
  4. Add the cooled spinach and feta cheese to the mixture and stir it all together.
  5. Roll out the pie crust on a lightly floured surface and cut out circles to fit the muffin tin.
  6. Place the pie crust circles in the muffin tin and press them down gently.
  7. Pour the spinach and feta mixture into each pie crust until it's about 3/4 full.
  8. Bake the mini quiches for 20-25 minutes or until golden brown.

Serving Suggestions:

These mini quiches are perfect for a brunch or as an appetizer for a dinner party. Serve them warm or at room temperature. You can also make a large batch and freeze them for later use.
