Ingredients:
- 1 pound penne pasta
- 1 pound hot Italian sausage, casing removed

- 1 onion, chopped

- 1/2 cup chicken broth
- 1/2 cup heavy cream

Instructions:
- Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
- While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the sausage and cook until browned and cooked through, about 5-7 minutes. Using a slotted spoon, transfer the sausage to a plate and set aside.
- Add the onion and bell peppers to the skillet and cook until softened, about 5 minutes. Add the garlic and red pepper flakes and cook for an additional minute.
- Add the chicken broth to the skillet and bring to a simmer. Cook until the liquid has reduced by half, about 5 minutes.
- Add the heavy cream to the skillet and stir to combine. Bring to a simmer and cook for 2-3 minutes, or until the sauce has thickened slightly.
- Add the cooked pasta and sausage to the skillet and toss to combine. Add the Parmesan cheese and parsley and toss to combine. Season with salt and pepper, to taste.
