Spicy Sausage and Pepper Penne Recipe

Ingredients:

  • 1 pound penne pasta
  • 1 pound hot Italian sausage, casing removed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions:

  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the sausage and cook until browned and cooked through, about 5-7 minutes. Using a slotted spoon, transfer the sausage to a plate and set aside.
  3. Add the onion and bell peppers to the skillet and cook until softened, about 5 minutes. Add the garlic and red pepper flakes and cook for an additional minute.
  4. Add the chicken broth to the skillet and bring to a simmer. Cook until the liquid has reduced by half, about 5 minutes.
  5. Add the heavy cream to the skillet and stir to combine. Bring to a simmer and cook for 2-3 minutes, or until the sauce has thickened slightly.
  6. Add the cooked pasta and sausage to the skillet and toss to combine. Add the Parmesan cheese and parsley and toss to combine. Season with salt and pepper, to taste.
  7. Serve hot and enjoy!
