Ingredients

  • 1 cup quinoa
  • 1 can chickpeas, drained and rinsed
  • 1 red bell pepper, chopped
  • 1 yellow squash, chopped
  • 1 zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tbsp. lemon juice
  • 2 tbsp. honey
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Instructions

  1. Cook quinoa according to package instructions and set aside.
  2. In a large bowl, combine chickpeas, bell pepper, squash, zucchini, and cherry tomatoes.
  3. In a small bowl, whisk together olive oil, lemon juice, honey, cumin, coriander, smoked paprika, cinnamon, salt, and pepper.
  4. Pour dressing over vegetables and toss to coat.
  5. Add cooked quinoa to the bowl with the vegetables and mix well.
  6. Stir in cilantro, mint, and parsley.
  7. Serve immediately or chill in the refrigerator for up to 2 days.
