Ingredients
- 1 cup quinoa
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, chopped
- 1 yellow squash, chopped
- 1 zucchini, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tbsp. lemon juice
- 2 tbsp. honey
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1/2 tsp. smoked paprika
- 1/2 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/4 tsp. black pepper
Instructions
- Cook quinoa according to package instructions and set aside.
- In a large bowl, combine chickpeas, bell pepper, squash, zucchini, and cherry tomatoes.
- In a small bowl, whisk together olive oil, lemon juice, honey, cumin, coriander, smoked paprika, cinnamon, salt, and pepper.
- Pour dressing over vegetables and toss to coat.
- Add cooked quinoa to the bowl with the vegetables and mix well.
- Stir in cilantro, mint, and parsley.
- Serve immediately or chill in the refrigerator for up to 2 days.
