Ingredients:
- 6 egg yolks
- 3/4 cup white sugar
- 2/3 cup milk
- 1 1/4 cups heavy cream
- 1/2 teaspoon vanilla extract
- 1 pound mascarpone cheese
- 1/4 cup strong brewed coffee
- 2 tablespoons rum
- 24 ladyfingers
- 1 tablespoon cocoa powder
Instructions:
- In a large bowl, whisk together egg yolks and sugar until well blended and the mixture is thick and creamy.
- Add milk to the egg yolk mixture and stir to combine.
- Transfer the egg yolk mixture to a saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon. Remove from heat and let it cool.
- In a large bowl, beat the cream with vanilla extract until stiff peaks form.
- Add mascarpone cheese to the cooled egg yolk mixture and stir to combine.
- Fold in the whipped cream into the mascarpone mixture.
- In a small bowl, mix together the brewed coffee and rum.
- Dip each ladyfinger into the coffee mixture and arrange in a single layer in a 9x13 inch dish.
- Spoon half of the mascarpone mixture over the ladyfingers and spread it evenly.
- Repeat with another layer of ladyfingers and mascarpone mixture.
- Cover and refrigerate for at least 2 hours or overnight.
- Sift cocoa powder over the top of the tiramisu before serving.
