Ingredients:
- 1 pound pasta
- 2 cups broccoli florets
- 2 cups cooked, shredded chicken
- 2 tablespoons olive oil
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 cup shredded cheddar cheese
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Directions:
- Preheat the oven to 375°F.
- Cook the pasta according to the package directions. Add the broccoli to the water during the last 2-3 minutes of cooking time. Drain and set aside.
- In a separate pan, heat the olive oil over medium heat. Add the flour and whisk until smooth. Gradually add the milk, whisking constantly, until the mixture is thick and bubbly.
- Add the cheddar cheese and stir until melted. Add salt and pepper to taste.
- Combine the pasta, broccoli, and chicken in a large bowl. Pour the cheese sauce over the top and stir to combine.
- Transfer the mixture to a 9x13 inch baking dish. Sprinkle the breadcrumbs and Parmesan cheese over the top.
- Bake for 20-25 minutes, or until the top is golden brown and the mixture is heated through.
