Ingredients:

  • 1 cup farro
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 1 zucchini, chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried rosemary
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. In a large pot, cook the farro according to package instructions. Drain and set aside.
  2. In the same pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes, or until the onion is translucent.
  3. Add the celery, carrots, and zucchini and sauté for an additional 5 minutes, or until the vegetables are slightly softened.
  4. Add the can of diced tomatoes, vegetable broth, and dried rosemary. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the vegetables are tender.
