Ingredients:
- 8 oz. flank steak, thinly sliced
- 8 oz. rice noodles
- 2 tbsp. vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 tbsp. soy sauce
- 1 tsp. sesame oil
- 1 tsp. cornstarch
- Salt and pepper, to taste
Instructions:
- Soak the rice noodles in hot water for 5-7 minutes, or until softened. Drain and set aside.
- In a small bowl, whisk together the soy sauce, sesame oil, cornstarch, and some salt and pepper. Set aside.
- Heat the vegetable oil in a large wok or skillet over high heat. Add the sliced flank steak and stir-fry for 2-3 minutes, or until browned. Remove from the wok and set aside.
- Add the sliced bell peppers, onion, and minced garlic to the wok and stir-fry for 3-4 minutes, or until they start to soften.
- Add the cooked rice noodles and the steak back to the wok. Pour the sauce over the top and stir-fry for an additional 2-3 minutes, or until everything is heated through and the sauce has thickened.
