  • 4 medium sweet potatoes
  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1/2 red onion, chopped
  • 1/2 red bell pepper, chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh cilantro

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Pierce each sweet potato several times with a fork, then place them on a baking sheet and bake for 45-50 minutes, or until they are tender.
  3. Meanwhile, heat the olive oil in a large skillet over medium heat.
  4. Add the red onion and bell pepper and sauté until they are tender, about 5 minutes.
