Ingredients:
- 1 lb. beef sirloin steak, thinly sliced
- 1 tbsp. olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 oz. sliced mushrooms
- 4 cups beef broth
- 1 tsp. paprika
- 1/2 tsp. dried thyme
- 1/4 cup sour cream
- Salt and pepper, to taste
- Fresh parsley, chopped (optional for garnish)
Instructions:
- Heat the olive oil in a large pot over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Remove the beef from the pot and set aside.
- Add the chopped onion and minced garlic to the pot and sauté until softened, about 2-3 minutes.
- Add the sliced mushrooms to the pot and sauté until they release their moisture and start to brown, about 5-6 minutes.
- Pour in the beef broth, paprika, and dried thyme. Bring the soup to a boil and then reduce the heat to medium-low. Simmer for 10 minutes.
