Ingredients:

  • 1 lb. beef sirloin steak, thinly sliced
  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz. sliced mushrooms
  • 4 cups beef broth
  • 1 tsp. paprika
  • 1/2 tsp. dried thyme
  • 1/4 cup sour cream
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions:

  1. Heat the olive oil in a large pot over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Remove the beef from the pot and set aside.
  2. Add the chopped onion and minced garlic to the pot and sauté until softened, about 2-3 minutes.
  3. Add the sliced mushrooms to the pot and sauté until they release their moisture and start to brown, about 5-6 minutes.
  4. Pour in the beef broth, paprika, and dried thyme. Bring the soup to a boil and then reduce the heat to medium-low. Simmer for 10 minutes.
  5. Stir in the cooked beef and sour cream. Season with salt and pepper to taste.
  6. Simmer the soup for an additional 5-10 minutes to allow the flavors to meld together.
  7. Serve hot, garnished with fresh chopped parsley if desired.
