Ingredients:

  • 4 large bell peppers
  • 1 cup quinoa
  • 1 medium zucchini, diced
  • 8 oz mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated parmesan cheese

Instructions:

1. Preheat oven to 375°F (190°C).2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.3. Rinse quinoa under running water, and cook according to package instructions.4.
