Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract

Start by preheating your oven to 350°F and lining a muffin tin with liners. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, pumpkin pie spice, granulated sugar, and brown sugar.

In a separate mixing bowl, whisk together the pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth. Pour the wet mixture into the dry mixture and stir until just combined.

Spoon the batter into the muffin tin, filling each about 2/3 of the way full. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
