Lemon Herb Roasted Chicken Recipe

Ingredients:

  • 1 whole chicken (3-4 pounds)
  • 2 lemons
  • 3-4 cloves of garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped fresh thyme
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Remove the giblets from the chicken, rinse it inside and out, and pat it dry with paper towels.
  3. In a small bowl, mix together the minced garlic, olive oil, rosemary, thyme, salt, and pepper.
  4. Place the chicken in a roasting pan or baking dish, breast side up.
  5. Rub the herb mixture all over the chicken, making sure to coat it well both inside and out.
  6. Cut one lemon in half, and squeeze the juice over the chicken.
  7. Place the lemon halves inside the chicken cavity.
  8. Cut the other lemon into wedges and arrange them around the chicken in the baking dish.
  9. Bake the chicken for approximately 1 1/2 to 2 hours, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer.
  10. Let the chicken rest for 10-15 minutes before carving and serving.
