Ingredients:
- 1 lb. rotini pasta
- 1 pint cherry tomatoes, halved
- 1 large cucumber, seeded and diced
- 1 small red onion, diced
- 1 cup crumbled feta cheese
- 1/2 cup kalamata olives, pitted and sliced
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1/3 cup olive oil
- 3 tbsp. red wine vinegar
- 1 tbsp. Dijon mustard
- 2 cloves garlic, minced
- Salt and pepper, to taste
Instructions:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions, until al dente.
- While the pasta is cooking, prepare the vegetables and herbs.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper to make the dressing.
- Drain the pasta and rinse under cold water to cool. Transfer the pasta to a large bowl.
- Add the tomatoes, cucumber, red onion, feta cheese, olives, parsley, and dill to the bowl with the pasta.
- Pour the dressing over the pasta salad and toss to combine.
- Chill the salad for at least 30 minutes before serving to allow the flavors to meld together.
