Ingredients:

  • 1 lb. rotini pasta
  • 1 pint cherry tomatoes, halved
  • 1 large cucumber, seeded and diced
  • 1 small red onion, diced
  • 1 cup crumbled feta cheese
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/3 cup olive oil
  • 3 tbsp. red wine vinegar
  • 1 tbsp. Dijon mustard
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions:

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions, until al dente.
  2. While the pasta is cooking, prepare the vegetables and herbs.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper to make the dressing.
