Ingredients:
- 1 cup quinoa, rinsed and drained
- 2 cups water
- 1/2 cup red onion, diced
- 1/2 cup cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, pitted and chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh lemon juice
- 1/4 cup olive oil
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, or until the quinoa is tender and the water has been absorbed. Fluff with a fork and set aside to cool.
