Ingredients:

  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 1/2 cup red onion, diced
  • 1/2 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, or until the quinoa is tender and the water has been absorbed. Fluff with a fork and set aside to cool.
  2. In a large bowl, combine the cooled quinoa, red onion, cucumber, cherry tomatoes, feta cheese, and Kalamata olives.
  3. In a small bowl, whisk together the lemon juice, olive oil, garlic, oregano, salt, and pepper.
