Ingredients:

  • 4 medium-sized beets, washed and trimmed
  • 4 cups of arugula
  • 4 oz. of goat cheese, crumbled
  • 1/4 cup of chopped walnuts
  • 2 tbsp. of balsamic vinegar
  • 1 tbsp. of honey
  • 3 tbsp. of olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F.
  2. Wash and trim the beets, then wrap them in foil and place them on a baking sheet.
  3. Bake the beets for 45-50 minutes, or until they are tender when pierced with a fork.
