Delicious and Nutritious Vegetable Biryani Recipe

If you're looking for a tasty and healthy vegetarian meal, then look no further than this vegetable biryani recipe. It's packed with flavorful spices, aromatic herbs, and a variety of nutritious vegetables that make it a satisfying and wholesome dish.

Ingredients:

  • 2 cups basmati rice
  • 4 cups water
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder
  • 1 teaspoon salt
  • 1 cup mixed vegetables (carrots, peas, cauliflower, and potatoes)
  • 1/2 cup cashews, soaked in water for 15 minutes
  • 1/2 cup raisins, soaked in water for 15 minutes
  • 2 tablespoons chopped cilantro leaves

Instructions:

  1. Heat the vegetable oil in a large skillet over medium heat. Add the sliced onions and cook until they're golden brown.
  2. Add the cumin seeds, coriander seeds, fennel seeds, and mustard seeds to the skillet and cook for 1-2 minutes until fragrant.
  3. Add the turmeric powder, garam masala, red chili powder, and salt to the skillet and cook for another 1-2 minutes.
  4. Add the mixed vegetables to the skillet and cook for 5-7 minutes until they're tender.
  5. Add the soaked cashews and raisins to the skillet and stir to combine.
  6. Layer the cooked basmati rice and the vegetable mixture in a large pot, starting and ending with the rice.
  7. Cover the pot and cook on low heat for 10-15 minutes until the flavors are well combined.
  8. Garnish with chopped cilantro leaves and serve hot.
