Spicy Jambalaya with Andouille Sausage Recipe

Ingredients:

  • 1 lb Andouille sausage, sliced
  • 1 lb chicken breast, cut into bite-sized pieces

  • 2 cups of long-grain white rice

  • 1 tsp of smoked paprika
  • 1 tsp of salt

Instructions:

  1. Heat olive oil in a large Dutch oven over medium-high heat.
  2. Add the sliced Andouille sausage and cook until browned. Remove the sausage and set aside.
  3. Add the chicken to the same pot and cook until browned. Remove the chicken and set aside.
  4. Add the onion, green pepper, and garlic to the pot and cook until softened.
  5. Add the rice, chicken broth, diced tomatoes, and all the spices to the pot. Stir well to combine.
  6. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the rice is tender and has absorbed all the liquid.
  7. Return the cooked chicken and Andouille sausage to the pot along with the shrimp. Cook for an additional 5-7 minutes, or until the shrimp turn pink and opaque.
  8. Garnish with chopped fresh parsley and serve hot.
