  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced

  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups mixed greens
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 1/4 cup balsamic vinaigrette dressing

To start, preheat your oven to 400 degrees F. In a large bowl, combine the sliced bell peppers, zucchini, yellow squash, red onion, and minced garlic. Add olive oil, salt, and black pepper, and toss to coat the vegetables evenly.
