Ingredients:

  • 1 1/2 cups warm water
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 1 package active dry yeast
  • 4 1/2 cups all-purpose flour
  • 4 tablespoons unsalted butter, melted
  • 10 cups water
  • 2/3 cup baking soda
  • 1 large egg yolk beaten with 1 tablespoon water
  • Coarse sea salt or pretzel salt

Start by combining the warm water, sugar, and kosher salt in the bowl of a stand mixer. Sprinkle the yeast on top and let it sit for 5 minutes, or until the mixture begins to foam.

Add the flour and melted butter to the mixing bowl and mix on low speed until the ingredients are combined. Increase the speed to medium and knead until the dough is smooth and pulls away from the sides of the bowl, about 4-5 minutes.

Preheat your oven to 450°F. Line two baking sheets with parchment paper and set aside.

Divide the dough into 12 equal pieces. Roll each piece into a long rope and shape into a pretzel. In a large pot, bring the 10 cups of water and baking soda to a boil. Boil each pretzel for 30 seconds and then transfer to the prepared baking sheets.

Brush each pretzel with the egg wash and sprinkle with coarse sea salt. Bake for 12-14 minutes, or until golden brown. Serve warm and enjoy!
