Ingredients:

  • 12 lasagna noodles
  • 1 tablespoon olive oil
  • 1 onion, chopped

  • 1 jar (24 ounces) marinara sauce
  • 1 cup ricotta cheese

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add onions and garlic, and sauté until they become soft and fragrant.
  4. Add mushrooms, salt, and pepper. Cook until the mushrooms are tender and the liquid evaporates.
  5. Add spinach and cook for another 5 minutes.
  6. In a bowl, mix ricotta cheese, Parmesan cheese, and basil.
  7. Spread a layer of marinara sauce on the bottom of a 9x13 inch baking dish.

  11. Sprinkle 1 cup of mozzarella cheese on top of the spinach and mushroom mixture.
  12. Repeat the layers of noodles, cheese, and mushroom and spinach mixture.
  13. Top with a layer of lasagna noodles and spread the remaining marinara sauce over the noodles.
  14. Sprinkle the remaining mozzarella cheese on top of the sauce.
  15. Cover the baking dish with foil and bake for 25 minutes.
  16. Remove the foil and bake for another 25 minutes, until the cheese is melted and bubbly.
  17. Let it sit for 5 minutes before serving.
