How to Make Delicious Homemade Ramen Noodles

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup warm water
  • 2 tablespoons kansui (alkaline water) or 1/4 teaspoon baking soda (optional)

To make the dough, combine the flour and salt in a large mixing bowl. In a separate bowl, mix together the warm water and kansui (or baking soda). Gradually pour the water mixture into the flour mixture, stirring constantly until the dough comes together.

Knead the dough for about 5-10 minutes until it becomes smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

After the dough has rested, divide it into 4 equal portions. Roll out each portion into a thin sheet, about 1/8 inch thick. Cut the sheets into long, thin noodles using a sharp knife or pasta cutter.

Bring a pot of water to a boil and add the noodles. Cook for 2-3 minutes, or until the noodles are tender but still slightly firm. Drain the noodles and rinse them under cold water to stop the cooking process.
