Hearty Beef and Mushroom Stew Recipe

Ingredients:

  • 1 pound beef stew meat, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 tablespoon minced garlic
  • 8 ounces mushrooms, sliced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions:

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the beef and cook until browned on all sides, about 5 minutes. Remove the beef from the pot and set aside.
  3. Add the onion and garlic to the pot and cook until the onion is translucent, about 3 minutes.
  4. Add the mushrooms, carrots, and celery to the pot and cook until the vegetables are tender, about 5 minutes.
  5. Return the beef to the pot and add the diced tomatoes, beef broth, Worcestershire sauce, tomato paste, thyme, salt, and pepper.
  6. Bring the stew to a boil, then reduce the heat to low and simmer for 1-2 hours, or until the beef is tender and the stew has thickened.
  7. Serve hot with crusty bread for dipping.
