Ingredients:

  • 4 large bell peppers
  • 1 cup of cooked rice
  • 1 can of black beans, drained and rinsed
  • 1 can of corn, drained

  • 2 cloves of garlic, minced

  • 1 teaspoon of cumin
  • 1/2 teaspoon of smoked paprika
  • Salt and pepper to taste
  • 1 cup of shredded cheese (cheddar, Monterey jack, or Mexican blend)

Preheat your oven to 375°F. Cut off the tops of the peppers and remove the seeds and membranes.

In a large skillet, sauté the onion and garlic in olive oil until they are soft and translucent. Add the corn, beans, and spices, and cook for another 5 minutes. Add the cooked rice to the skillet and mix everything together.

Stuff the peppers with the vegetable mixture until they are full. Place the peppers in a baking dish and cover with foil. Bake for 30 minutes.

Remove the foil, add shredded cheese on top of each pepper, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
