Ingredients:
- 4 large potatoes, peeled and cubed
- 1/4 cup milk
- 1/4 cup butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup diced carrots
- 1 cup frozen peas
- 1 cup diced mushrooms
- 1 can lentils, drained and rinsed
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup vegetable broth
- 1/4 cup all-purpose flour
Instructions:
- Boil the potatoes in a large pot of salted water until tender. Drain and mash with milk and butter until smooth. Set aside.
- In a large skillet, sauté the onion and garlic until soft and translucent. Add the carrots, peas, and mushrooms and cook for a few minutes until the vegetables are tender.
- Add the lentils, thyme, rosemary, paprika, salt, and pepper to the skillet and stir to combine.
