Ingredients:

  • 4 large potatoes, peeled and cubed
  • 1/4 cup milk
  • 1/4 cup butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 cup diced mushrooms
  • 1 can lentils, drained and rinsed
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • 1/4 cup all-purpose flour

Instructions:

  1. Boil the potatoes in a large pot of salted water until tender. Drain and mash with milk and butter until smooth. Set aside.
  2. In a large skillet, sauté the onion and garlic until soft and translucent. Add the carrots, peas, and mushrooms and cook for a few minutes until the vegetables are tender.
  3. Add the lentils, thyme, rosemary, paprika, salt, and pepper to the skillet and stir to combine.
