Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 large peaches, sliced
  • 6 cups mixed greens
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced almonds
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Season chicken breasts with salt and pepper, then grill for 6-7 minutes on each side or until cooked through.
  3. While the chicken is cooking, prepare the salad by combining the mixed greens, sliced peaches, red onion, feta cheese, and sliced almonds in a large bowl.
  4. Once the chicken is cooked, let it rest for 5 minutes, then slice it into thin strips.
