Creamy Broccoli and Ham Soup Recipe

Ingredients:

  • 1 head of broccoli, chopped into small florets
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 cups of ham, diced
  • 4 cups of chicken or vegetable broth
  • 1 cup of heavy cream
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook for 2-3 minutes until the onion is softened.
  3. Add the broccoli and ham to the pot and cook for an additional 5 minutes, stirring occasionally.
  4. Pour in the chicken or vegetable broth and bring to a boil.
  5. Reduce the heat to low and let the soup simmer for 20 minutes until the broccoli is tender.
  6. Remove the pot from the heat and use an immersion blender to blend the soup until it is smooth.
  7. Stir in the heavy cream until well combined.
  8. Season with salt and pepper to taste.
  9. Serve hot with crusty bread or crackers.
