Ingredients
- 1 pound carrots, peeled and chopped
- 1 onion, chopped
- 2 tablespoons olive oil
- 3 cups vegetable broth
- 1 tablespoon grated fresh ginger
- 1/2 teaspoon salt

- Dollop of sour cream (optional)
To start, heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add chopped carrots, vegetable broth, grated ginger, salt, and black pepper. Bring to a boil, reduce heat, and simmer until carrots are tender, about 20 minutes.
