Ingredients:

  • 1 cup of farro
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 lb. of mushrooms, sliced
  • 6 cups of chicken or vegetable broth
  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons of fresh thyme leaves, chopped
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic and sauté until fragrant and translucent.
