Ingredients

  • 1 cup barley
  • 2 cups vegetable broth

  • 1 zucchini, diced
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, bring the barley and vegetable broth to a boil. Reduce heat, cover, and simmer for 30 minutes.
  3. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened.
  4. Add the mushrooms, red bell pepper, and zucchini to the skillet and cook until tender.
  5. Stir in the thyme and rosemary leaves.
  6. Combine the cooked barley and vegetables in a large baking dish. Season with salt and pepper to taste.
  7. Cover the dish with foil and bake for 20 minutes.
  8. Remove the foil and bake for an additional 10 minutes.
