Ingredients
- 1 cup barley
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced

- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh rosemary leaves
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, bring the barley and vegetable broth to a boil. Reduce heat, cover, and simmer for 30 minutes.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened.
- Add the mushrooms, red bell pepper, and zucchini to the skillet and cook until tender.
- Stir in the thyme and rosemary leaves.
- Combine the cooked barley and vegetables in a large baking dish. Season with salt and pepper to taste.
