Delicious Mini Chicken and Waffles Recipe

Ingredients:

  • 1 lb. boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 eggs
  • 1/4 cup milk
  • 1 cup panko breadcrumbs
  • 1/4 cup vegetable oil
  • 1/4 cup honey
  • 1/4 cup butter
  • 8 frozen mini waffles

Directions:

  1. Preheat oven to 375°F.
  2. Cut chicken breasts into small bite-sized pieces.
  3. In a large bowl, mix together flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  4. In a separate bowl, whisk together eggs and milk.
  5. Place panko breadcrumbs in a shallow dish.
  6. Dip chicken pieces in the flour mixture, followed by the egg mixture, and then coat in the panko breadcrumbs.
  7. Heat vegetable oil in a large skillet over medium-high heat.
  8. Add chicken pieces to the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
  9. Transfer chicken to a baking sheet and bake in the oven for 10-12 minutes, or until cooked through.
  10. In a small saucepan, melt together honey and butter over low heat.
  11. Toast mini waffles in a toaster until crispy.
  12. To serve, place one chicken piece on top of each mini waffle and drizzle with honey butter.
