Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 4 tablespoons unsalted butter
  • 4 tablespoons olive oil
  • 1 cup sliced mushrooms
  • 1/2 cup Marsala wine
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley

Instructions:

  1. Pound the chicken breasts to an even thickness of about 1/4 inch.
  2. In a shallow bowl, mix together the flour, salt, pepper, and oregano.
  3. Dredge the chicken in the flour mixture, shaking off any excess.
  4. In a large skillet over medium-high heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil.
  5. Add the chicken to the skillet and cook until browned on both sides and cooked through, about 4 minutes per side. Remove the chicken from the skillet and set aside.
  6. Add the remaining butter and olive oil to the skillet.
  7. Add the mushrooms and cook until they release their liquid and brown, about 5 minutes.
