Delicious Chicken and Chickpea Stew Recipe

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 can chickpeas, drained and rinsed
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 1 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1/4 cup chopped fresh parsley
  • 2 tbsp olive oil

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the chicken and cook until browned, about 5 minutes.
  2. Remove the chicken from the pot and set it aside.
  3. Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  4. Add the chicken back to the pot, along with the chickpeas, chicken broth, diced tomatoes, tomato paste, cumin, smoked paprika, salt, and black pepper.
  5. Bring the stew to a boil, then reduce the heat to low and let it simmer for 20 minutes.
  6. Add the red bell pepper and zucchini to the pot and continue to simmer for another 10-15 minutes, or until the vegetables are tender.
  7. Stir in the chopped parsley and serve hot.
