Ingredients:
- 1 pound beef stew meat, cut into bite-sized pieces
- 2 large sweet potatoes, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions:
- Heat olive oil in a large pot over medium-high heat. Add beef and cook until browned on all sides, about 5-7 minutes.
- Add onion and garlic to the pot and sauté for 2-3 minutes, until onion is translucent.
- Add sweet potatoes, beef broth, thyme, rosemary, paprika, salt, and black pepper to the pot. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low and let simmer for 1-2 hours, or until the beef is tender and the sweet potatoes are cooked through.
