Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup green peas
  • 2 tsp garam masala
  • 1 tsp cumin powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/4 tsp cayenne pepper
  • 1/4 cup cashews, chopped
  • 1/4 cup raisins
  • 2 cups vegetable broth
  • Salt and pepper to taste
To begin, rinse the quinoa thoroughly and drain well. In a medium-sized pot, bring the quinoa and water to a boil. Once boiling, reduce the heat to low and cover. Simmer for 15-20 minutes or until the quinoa is fully cooked and the water is absorbed.While the quinoa is cooking, heat the olive oil in a large pan over medium-high heat. Add the chopped onion and cook until translucent. Next, add the minced garlic and grated ginger and cook for another minute or until fragrant.Add the chopped bell peppers, zucchini, and green peas to the pan and cook for 5-7 minutes or until the vegetables have softened. Stir in the garam masala, cumin powder, turmeric powder, coriander powder, cayenne pepper, cashews, and raisins. Cook for an additional 2-3 minutes or until the spices are fragrant.Once the quinoa is fully cooked, add it to the pan with the vegetables and stir to combine. Pour in the vegetable broth and stir well. Reduce the heat to low and cover the pan. Let the mixture simmer for 10-15 minutes or until the liquid has been absorbed and the vegetables are tender.Season with salt and pepper to taste and garnish with fresh cilantro.
